Healthy Bites: Middle Eastern Asparagus Salad [Video]

PEORIA (25News Now) – The unique flavors of the Middle East combine with seasonal asparagus in this spring salad.

Ingredients

Serves 4

• 1 bunch asparagus
• Cooking spray
• 2 cups fresh spinach and arugula mix
• ¼ cup chopped dates
• 1 Tablespoon extra-virgin olive oil
• 1 Tablespoon fresh lemon juice
• 1 Tablespoon Tahini
• ¼ teaspoon ground cinnamon
• ¼ teaspoon ground ginger
• ¼ teaspoon salt
• ⅛ teaspoon ground cumin
• ¼ cup slivered almonds

Directions

1. Cut off bottom 1 inch of asparagus spears and discard. Chop each spear into 1 ½ inch pieces, place in air fryer and spray with cooking spray. Air fry on 370 degrees for 4 minutes, toss and air fry for an additional 4 minutes. Let cool for 10 minutes.
