Ingredients
Serves 4
- 1 bunch asparagus
- Cooking spray
- 2 cups fresh spinach and arugula mix
- ¼ cup chopped dates
- 1 Tablespoon extra-virgin olive oil
- 1 Tablespoon fresh lemon juice
- 1 Tablespoon Tahini
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon salt
- ⅛ teaspoon ground cumin
- ¼ cup slivered almonds
Directions
1. Cut off bottom 1 inch of asparagus spears and discard. Chop each spear into 1 ½ inch pieces, place in air fryer and spray with cooking spray. Air fry on 370 degrees for 4 minutes, toss and air fry for an additional 4 minutes. Let cool for 10 minutes.
